I make a mean latte :) I'm even starting to do some of the latte art. I like latte's just straight up most of the time with the extra shot (Mainly the 3 shot 16 ounce is my favorite), but when I want a little sweetener, I have to go for the vanilla.
 
Oooh, I'd have to agree with you though. I usually get an extra shot in my Latte's as well. Although I can't say I've ever been a big fan of adding flavors... if I do add something, it's either just the slightest bit of mocha, or a little caramel.
 
Gotta make sure it's timed right though. I love my work and the people I work with, but some of them get lazy with the shot timing (We have a traditional machine, it's awesome) So sometimes it's too bitter, some times it's like water
 
UGH! That's what I absolutely CAN NOT stand about Starbuck's now. Automated machines just completely kill the art of making drinks! >_____<
 
I don't work at a Starbucks, but most of our chain is automatic now, which is awful. I have worked with automatic, and it just takes out all the drink personality. It is an art, and people don't seem to get that. Then again, so many people just want to look like they're coffee drinkers, and don't really know the difference.
 
Also, I've found the ideal time for a shot of espresso is 20-25 seconds for a double shot, and 15-20 seconds on a single shot. There's a lot of work and practicing when it comes to pulling down the perfect shot, and people just don't realize that at all now a days. The courseness of the beans, how hard you tamp it, the pressure inside of the actual machine... all of it counts.
