My evergreen favorite is defenestrate. It's just so utterly specific as to be timelessly immutable. I can believe that many years hence, its primary use will still be to describe the act of ejecting someone via a window

One that has grown on me the past few years is pluvial. I am quite enamored with the rain, so having an adjective besides "rainy" is nice.
