I'm back and terribly tardy responding to the PMs gathered in my inbox. I'm also yawning, so other than this quick post, I think tomorrow is when I'll tackle my PMs and posts.
Yesterday, I made a killer home-made pizza crust. I've been trying to get it just right for awhile, but I don't cook pizza that often. So it's been a long-term project. But last night it came out beautifully crisp, delightfully light, and totally scrumptious. Mind you, it's not the pizza dough for everyone. I use 1/2 wheat flour and 1/2 bread flour. You can use all purpose flour, but the dough comes out chewier and I really wanted that light, crispy taste. It's between a regular pizza crust and a thick crust, but that's because I let it sit for quite awhile so the yeast works its magic.
Anyway, I finally got it right last night and my friends who had stopped by promptly polished it off. I do a pesto-based sauce instead of the more traditional tomato bases sauce. Last night I did my pesto-Alfredo sauce with Kalamata olives, green olives, artichoke hearts, sun dried tomatoes, garlic, and then mozzarella and feta cheese.
Heaven! Pure heaven! Frankly, not to brag (too late I know), it came out too good. Usually with the friends I have over, there is some leftovers. Not this time.
Let's see. Today I did a little business and then hooked up with some hipster friends. We split an order of eggrolls.
You wrap an egg-roll in a lettuce leaf for a bit more flavor and texture. Then I had Vietnamese coffee. Very good!
And an ungodly large bowl of pho.
The restaurant has Hello Kitty bottles of wine. But we didn't try any. One, it seemed expensive and if you look at the bottles, you'll see from the dust that they've been there a while.
We went to there place and played a board game called Seven Wonders.
A board game? When they a have a huge flat screen 4000K television, mutlipe wi's, laptops, computers, etc. It was fun. I came in fourth out of five. I had no idea what I was doing. And then I came home. Twenty to Thirty minute air plane ride each way, but still a very long day.
